Fiesta Lunch

Well Operation Egg White didn't turn out egg-xactly how I planned.  (Cheesy, I know haha)  I think it would have worked if I would have made a bit more oatmeal.  I was actually still hungry when I was done eating so I think I needed a bit more.  Next time perhaps.

This week is the last week of classes!  WOO HOO!  Just have to make it through this week and finals and then I'll be free...for the weekend until summer classes begin.  I'm done going to the hospital so I got to sleep in a bit this morning.  I woke up and made some eggs.  This has to be my fav breakfast.  It is so yummy and keeps me full.

After breakfast I hit the gym for a workout.  It lasted longer than planned and my arms feel like jello.  That's a good thing though!  When I got home I made the last taco I had leftover.  I am out of tomatoes though so it wasn't the best.  I had guacamole on the side which was SO good!  A mini fiesta lunch!


After working on my final case study presentation for the rest of the day I thought I would have worked up a bigger appetite before class haha.  I wasn't too hungry though so I made a smoothie with frozen peaches and blueberries, yogurt, whole grain drink and shredded coconut.  I've never added coconut before but it was SO yummy.  It made it feel tropical!

I did get hungry in the middle of class and had a sudden craving for Raisin Bran.  I don't know where it came from but I made up a bowl as soon as I got home.

I'm giving myself the night off because I finished my case study so I'm off to relax before bed!

Operation Egg White

I can't believe it's already Friday noche!  Where did the week go???  I'm not complaining because I am quite excited to get this semester under my belt but it sure does make me feel like I have a lot more to do in a lot smaller time period and before I know it, summer classes will be starting.

Today I attended the RD registration exam review class.  It was a long day but a LOT of useful information.  The fun continues tomorrow all day as well.  I am glad I still have a year left before I have to take it but I am a bit jealous of those who are going to be RDs in just a couple months!

Lately I've been loving my oatmeal for breakfast!  I've been adding flax seed, whole grain drink, pumpkin, shredded coconut, fruit, and agave.  



The only problem is that it is not keeping me satisfied until lunch!  Tomorrow I'm going to try operation oatmeal egg white.  Hopefully adding a bit more protein will keep me full until lunchtime!  The days I have been eating two eggs and toast are the days that my tummy doesn't start growling until it is actually the right time to eat!


Fruit season is upon us!  I've been loving the fresh strawberries and grapes too!  They are so good to pair with breakfast, to add in a smoothie or just for a snack.

These gala apples are the yummmmmmmiest!

Why oh why did I not grow up putting avocado on my turkey sandwiches???  Really, life changing.  Or at least lunch changing.


Even though I went grocery shopping earlier this week I feel like I ran out so fast!  I don't want to go back because I'm going to The Mitten next week.  I don't like to stock my fridge when I won't be here to enjoy all of the goodies!  I have been doing a lot of salads and tacos + taco leftovers.  I love leftovers...they are so convenient.



I must go rest my brain for another full day of learning, learning and more learning tomorrow.

Don't Judge a Book By It's Cover

Hope you all had a fantastic Easter weekend.  I sure did in Michigan!  (Minus MSU losing the game booo!)  The weather was beautiful for the most part and I got to spend some time with my family and friends.

Yesterday when I got back I hit the gym and then was in a rush to eat before class.  Luckily my mom sent some beef stroganoff back with me.  It sure looks ugly but tastes wonderful!  I wish I had more.

This morning I had to be up earlier than usual for the hospital to do rounds with the physicians.  It was very interesting and definitely gives me more respect for doctors.  Dietitians know a lot but physicians know A LOT!  I made some maple syrup oatmeal with flax seed and a banana.  It was good but it needed more protein, I was hungry soon after.


My day at the hospital turned out to be longer than expected so I whipped up some yummy tacos when I got home.  Tacos are so easy, quick and good.  Pretty cheap too!

Tomorrow I'm headed to a breakfast downtown for extra credit for a class.  I'm sure it will be nice but I have to be up so early!  YIPES!

That means I'm off to bed, nighty night!

Yoga--Where have you gone?

I woke up feeling sick this morning, UGH!  I had a headache and a sore throat.  I've had strep throat many times before and it doesn't feel like that thank goodness.  The good thing was I did't have to go to the hospital today and I don't have to go tomorrow.  I would hate to get anyone else sick.  
Because I didn't feel good I just kept laying in bed this morning so breakfast was more around lunch time.  I had a bowl of maple syrup oatmeal and a whole wheat bagel with cream cheese.  (I guess I was really craving some carbs because I didn't eat any last night.)  Once these bagels are gone, I will NOT be buying anymore.  They are such a guilty pleasure.  I also had some orange juice (to get in my vitamin c!) and coffee.



 I had to make a grocery trip today where I spent nearly $84.  I don't have a job so I try to spend as little as possible but one thing I will not compromise on buying fruits and vegetables (which often are what rack up my bill.)  This trip didn't even include any meat or wine!
When I got home from I had some of my leftover orzo recipe.  (I still have a ton left, gosh!)  I also had a blood orange.



My school offers free yoga and I really loved it however I haven't yet attended this week.  Last week we went and it was nowhere to be found and tonight was the same thing!  It's so frustrating!  After waiting for a while, nobody showed up so I left and went to Hannah's to do some homework.  Ugh.
The homework took longer than expected so I got a late start on dinner.  (I also forgot taco seasoning so I was running around to grocery stores looking for that, ugh.)  When I got home I had tacos and chips and salsa for dinner.


These chips from TJ's were okay but nothing to write home about.  (You can see all the homework I'm covering up with my food.)
I also received a Michigan magazine today and I can't wait to read it.  It makes me miss home and get so excited for Michigan summers up north!

Off to conquer some of this homework!

Ole!

Oh how quickly I forget going to class from 6:30-9:30pm is so exhausting after a full day.  This week will be fully back in the swing of classes and the internship will start next week.  For the next two days I have MNT (medical nutrition therapy) refreshing from 9am-4pm and then class tomorrow night too.  I already have a full lunch packed.  I also packed Keefer a lunch because I convinced him to stay another night. (:  He has to leave at 4am though, ugh.
After another unhealthy breakfast of cinnamon rolls this morning (an apple and coffee too) we decided we needed to get out and get active so we walked for nearly an hour and a half around the neighborhood near my school and looked at all the houses.  It was fun, refreshing and much needed movement.  While contemplating what to have for lunch, Keith suggested a pesto salmon salad.  So when we got home that's what we made and it turned out to be a delicious (and huge) salad.  He smothered two salmon filets in pesto and tomatoes and baked for about 20 minutes.  We added them to a large pile of romaine, spinach, mushrooms, tomatoes, colby jack cheese, onions, croutons, dill weed, pepper, olives, balsamic vinegar and olive oil.  We also split a bran muffin.  So tasty.


After my huge salad I knew I wouldn't be ready for the Mexican dinner we had planned before class and I had a sweet tooth so I made another awesome chocolate chip, peanut butter on a slimwich.  MMM.  I'm becoming addicted to these as well.



After my treat Keefer packed me an apple for class and made me some decaf chamomile tea then sent me off to school!



Class went by slower than usual because I knew I was coming home to an awesome taco dinner.  I sure could get used to arriving home everyday to a scrumptious meal and Keefer!
